This week - my version of Celery Soup
Ingredients:
1 head of celery - chopped
1 large potato - peeled and chopped
1 large onion - peeled and chopped
1 large onion - peeled and chopped
1 vegetable stock cube
S & P to taste

2 tbps single cream
Method:

Put all ingredients - except cream - into a saucepan
cover with boiling water

Boil for about 30 - 40 minutes, until celery etc. are soft.
Leave to cool
Leave to cool
Liquidise all ingredients in blender or food processor until smooth.
Reheat gently, seasoning to taste
Serve in bowls with swirl of cream on top
